Could opening a payment application alter the evidence?

Yes. Opening an application can synchronise data, change caches and tokens, create provider access records and trigger authentication or alerts. Viewing is an evidential action, not necessarily passive observation.

Local and provider state can change together

The application may refresh balances, download or expire data, update databases or register endpoint, session, IP-related and time information. Wallets may synchronise with a network or expose sensitive keys, while another session may be alerted or displaced.

Record state and every interaction

Document screen, time, connection and whether the application was already open before touching it. Avoid unnecessary exploration and use forensic or specialist preservation where material.

If safeguarding requires access, record authority, reason and exact actions. Interpret later provider timestamps against that log and identify what examination may have changed.
